Our cider vinegar is made exclusively from organic apples grown in the Oeste or West region of Portugal, available in bottles of 25cl and 1lt.
Production process
The manufacturing process is simple and traditional.
It begins with making apple juice, which undergoes a double fermentation. During the first fermentation, the sugar in the apples is converted into alcohol, and during the second fermentation, the alcohol is transformed into acetic acid, resulting in the production of cider and cider vinegar.
In general, our vinegar takes about a year to be produced.
One of the characteristics of our vinegar is the absence of pasteurization, which requires special care in its storage. Please keep the vinegar in a cool place and protected from sunlight to maintain its stability. An interesting trick to keep it clear longer is to store it in the refrigerator.
Over time, it is natural for the vinegar to develop a gelatinous film - the "mother of vinegar" - which does not affect its quality or prevent its consumption.
