Gala apples are typically red, and originated from New Zealand. Known for their smooth, pleasant, and sweet flavor, they are enjoyed by consumers worldwide. In Portugal, they are among the varieties cultivated in the Oeste region. For this juice, we use Royal Gala, Gala Must, and Galáxia varieties, along with other varieties of apples. All the fruit we use comes from local fruit growers. If interested, you can check who produced the fruit on each bottle.
Production process
Our fruit juice production process is simple and traditional.
We grind the apples and press the resulting pulp to extract the juice. Then, we pasteurize and bottle it.
Recently, we found that pasteurization alone wasn't sufficient to preserve the juice, so we started adding a small amount of citric acid to regulate acidity and improve preservation. The amount added varies from batch to batch, depending on the original acidity of the juice, but it's always less than 0.03%, sometimes even reaching 0% in some batches and for certain fruits.
Generally, we avoid using additives in our products - we prefer them to be as simple as possible - but in this particular product, it's not always possible. Nevertheless, we always limit the amount used to the minimum necessary to fulfill its function.
Additionally, we don't add water to our juice, resulting in a pulpy consistency. For a more liquid juice, we recommend adding a bit of water before drinking. We also don't add sugar - the sweet taste of the juice comes from the fruit itself.
