This vinegar was the first in our fruit vinegar line to be launched. With a delicate raspberry flavor, it's a popular choice for those seeking a slightly different vinegar.
Made from our cider vinegar and raspberry juice, it's available in 25cl bottles.
Production process
The manufacturing process is simple and traditional.
It begins with making apple juice, which undergoes a double fermentation. During the first fermentation, the sugar in the apples is converted into alcohol, and during the second fermentation, the alcohol is transformed into acetic acid, resulting in the production of cider and cider vinegar.
In general, our vinegar takes about a year to be produced.
After producing the cider vinegar, we press raspberries to extract the juice, which is then added to the vinegar.
One of the characteristics of our vinegar is the absence of pasteurization, which requires special care in its storage. Please keep the vinegar in a cool place and protected from sunlight to maintain its stability. An interesting trick to keep it clear longer is to store it in the refrigerator.
Over time, it is natural for the vinegar to develop a gelatinous film - the "mother of vinegar" - which does not affect its quality or prevent its consumption.

This vinegar is versatile, suitable for use with vegetables, meats, and fish.
It can be used as a regular vinegar, to season salads and raw or cooked vegetables such as tomatoes, carrots, lettuce, onions, or cucumbers. It also pairs well with potatoes, pumpkins, broccoli, and greens, among others.
It complements a variety of meats and sausages, such as pork, beef, duck, chicken, or turkey, and also pairs nicely with fish and seafood, such as sardines, cod, salmon, trout, squid, shrimp, or crab.
Additionally, it pairs well with cheeses, nuts, olive oil, soy sauce, and a variety of fresh fruits.

Do you use glass or plastic bottles?
We use glass bottles.

I bought your vinegar, and after a short while, it developed a gelatinous substance. Is this normal?
Yes, it's perfectly normal.
Our vinegar is unpasteurized, which means it's a living or probiotic product—similar to yogurt. As a result, it can become cloudy and develop what is known as the 'mother of vinegar' due to the yeast present in it.
This phenomenon occurs mainly when the vinegar is stored in a warm place or exposed to sunlight. A simple tip to keep your vinegar clear for a longer time is to store it in the refrigerator. The cold temperatures cause the yeast to enter a dormant state, keeping the vinegar clearer for longer.
Regarding the bottle you have, if you don't like the appearance, you can filter the vinegar and then store the bottle in the fridge. However, if the appearance doesn't bother you, you can continue using the vinegar as you have so far.

I'm looking for unfiltered apple cider vinegar—with the so-called mother of vinegar. Is your vinegar filtered?
We do filter our vinegar during the bottling process. However, since it is not pasteurized, it naturally develops the mother of vinegar over time. To speed up this process, we recommend leaving your vinegar bottle open and placing it near a window to expose it to light and warmth.

What is the acidity level of your apple cider vinegar?
We bottle our vinegar with 5% acidity. However, since it is not pasteurized, the acidity level may vary slightly after bottling.

Do the vinegars have any alcohol content or are they 0.0% ABV?
Our sweet and sour vinegars contain no alcohol at all.
Our other vinegars, since they are not pasteurized, may contain traces of alcohol.

Do your products contain sulfites?
No.

Do your products contain gluten?
We use wheat and rye flour to seal and clean our still, which is used for producing brandies. While the likelihood of cross-contamination with our other products is very low, we cannot guarantee with 100% certainty that there is no contamination. Therefore, our products may contain traces of gluten.

Are your products vegan?
Yes. We do not use any animal-derived products or additives.
